  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 12 ounces penne pasta
  • 1 cup store-bought or homemade basil pesto
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 0.25 cup fresh basil leaves, chopped (optional for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove from the skillet and let rest for 5 minutes before slicing into bite-sized pieces.

While the chicken is cooking, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
