Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon Italian seasoning
  • 4 slices ciabatta bread
  • 4 tablespoons pesto sauce
  • 4 slices mozzarella cheese
  • 1 cup arugula
  • 2 tablespoons butter

Directions

Step 1

Preheat a grill pan or skillet over medium-high heat.

Step 2

Rub the chicken breasts with olive oil, salt, black pepper, and Italian seasoning.

Step 3

Grill the chicken breasts for 5-6 minutes per side or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes. Slice the chicken into thin strips.

Step 4

Spread 1 tablespoon of pesto sauce on each slice of ciabatta bread.

Step 5

Layer one slice of bread (pesto side up) with mozzarella cheese, grilled chicken slices, a handful of arugula, and another slice of mozzarella. Top with another slice of bread, pesto side down.

Step 6

Spread a thin layer of butter on the outside of both slices of bread.

Step 7

Heat a panini press or a skillet over medium heat. If using a skillet, place the sandwich in the pan and press with a heavy object (like another skillet) to achieve a pressed effect.

Step 8

Cook the panini for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Step 9

Remove from heat, slice in half, and serve warm.
