Ingredients

  • 2 loaves Ciabatta bread
  • 8 ounces Fresh mozzarella cheese
  • 1 large Tomato
  • 4 tablespoons Basil pesto
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 cup Arugula (optional)

Directions

Step 1

Slice the ciabatta bread into four sandwich-sized pieces, then slice each piece in half horizontally to create a top and bottom portion.

Step 2

Brush the cut sides of the bread lightly with olive oil.

Step 3

Heat a grill pan or skillet over medium heat. Place the bread, cut side down, onto the pan and toast for 1-2 minutes, until golden and slightly crispy. Remove and set aside.

Slice the fresh mozzarella and tomato into even slices, about 1/4-inch thick.

Step 5

Spread 1 tablespoon of basil pesto onto the cut side of each bottom slice of bread.

Step 6

Layer 2-3 slices of fresh mozzarella on top of the pesto, followed by 2-3 slices of tomato. Sprinkle with a pinch of salt and a touch of black pepper over the tomato for added flavor.

If desired, add a small handful of arugula on top of the tomato slices for a peppery bite.

Top with the other half of the ciabatta bread to complete the sandwich.
