Ingredients

  • 500 g gnocchi
  • 50 g fresh basil leaves
  • 50 g parmesan cheese, grated
  • 30 g pine nuts
  • 1 whole garlic clove
  • 6 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice
  • 1 whole lemon lemon zest
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil for cooking the gnocchi later.

Step 2

To make the pesto, combine fresh basil leaves, grated parmesan cheese, pine nuts, garlic, and 5 tablespoons of olive oil in a food processor or blender. Pulse until smooth, scraping down the sides as needed.

Step 3

Add the lemon juice, salt, and black pepper to the pesto mixture. Blend again until incorporated. Set the pesto aside.

Step 4

Cook the gnocchi in the boiling water until they float to the surface, which usually takes 2-3 minutes. Reserve 1/4 cup of the cooking water before draining the gnocchi.

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the drained gnocchi and sauté for 2-3 minutes to lightly brown them.
