  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon red wine vinegar
  • 2 medium russet potatoes, peeled and diced into 1-inch cubes
  • 2 medium carrots, peeled and chopped
  • 2 tablespoons cilantro, chopped
  • 1 lime, juiced

Directions

Step 1

Season the beef cubes with salt, black pepper, cumin, and paprika. Toss to coat evenly.
