  • 1 lb ground beef (85% lean)
  • 0.5 lb ground pork
  • 0.75 cup breadcrumbs
  • 0.25 cup milk
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 egg, beaten
  • 1 tbsp Worcestershire sauce
  • 0.25 cup ketchup
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.33 cup ketchup (for glaze)
  • 1.5 tbsp brown sugar (for glaze)
  • 1 tsp Dijon mustard (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2

In a large mixing bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the liquid.

Step 3

Add the ground beef, ground pork, diced onion, minced garlic, beaten egg, Worcestershire sauce, ketchup, Dijon mustard, smoked paprika, salt, and black pepper to the bowl. Mix everything together with your hands or a large spoon until just combined. Do not overmix as this could make the meat loaves tough.

Step 4

Divide the meat mixture into 4 equal portions. Shape each portion into an individual mini loaf, roughly 4 inches long and 2 inches wide. Place the loaves on the prepared baking sheet, spacing them apart.

Step 5

In a small bowl, mix together the glaze ingredients: ketchup, brown sugar, and Dijon mustard. Spoon the glaze evenly over the top of each meat loaf, spreading it with the back of a spoon to coat the surface.

Step 6

Bake the meat loaves in the preheated oven for 25–30 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.

Step 7

Remove the meat loaves from the oven and allow them to rest for 5 minutes. This helps the juices redistribute for a more flavorful bite.
