Ingredients

  • 2 whole Ripe persimmons
  • 1 whole Ripe banana
  • 113 grams Unsalted butter
  • 100 grams Brown sugar
  • 50 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 200 grams All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 50 grams Chopped walnuts (optional)
  • 50 grams Chocolate chips (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

Peel the persimmons and remove any seeds. Mash the persimmon pulp in a bowl until smooth. You should have about 1/2 cup of persimmon puree.

Step 3

In a separate bowl, mash the banana until smooth and set aside.

Step 4

In a large mixing bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy.

Add the persimmon puree, mashed banana, and vanilla extract to the butter-sugar mixture. Mix well to combine.
