Ingredients

  • 6 cups Fresh spinach
  • 1 cup Pomegranate arils
  • 1 cup Walnuts
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh mint leaves
  • 0.5 Red onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the fresh spinach thoroughly. Roughly chop if the leaves are very large, otherwise leave them whole, and place in a large salad bowl.

Step 2

Toast the walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently until fragrant. Remove from heat and let them cool before roughly chopping.

Thinly slice the red onion and add it to the bowl with the spinach.

Finely chop the fresh parsley and fresh mint leaves, then sprinkle them over the spinach mixture.
