Gradually add the water while mixing, until the dough comes together. Knead the dough for 8-10 minutes on a floured surface or until it becomes smooth and elastic.
Add the olive oil and knead the dough again for 2-3 minutes to incorporate the oil fully.
Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm spot for about 1 hour, or until it doubles in size.
While the dough is rising, prepare the glaze by mixing baking soda, 100 milliliters of water, and 1 teaspoon of flour in a small saucepan. Cook the mixture over medium heat, stirring constantly, until it thickens slightly. Set aside to cool.
Preheat your oven to 230°C (450°F). Place a baking stone or an inverted baking sheet in the oven to preheat.
