Ingredients

  • 2 pounds Boneless, skinless chicken thighs (or chicken breasts)
  • 1 cup Plain Greek yogurt
  • 1 large Onion (finely grated)
  • 3 tablespoons Lemon juice (freshly squeezed)
  • 3 tablespoons Olive oil
  • 4 cloves Garlic (minced)
  • 1 teaspoon Ground turmeric
  • 0.5 teaspoons Ground saffron
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 cups Bell peppers and onions (optional, for skewers)

Directions

Step 1

Cut the chicken thighs or breasts into 2-inch pieces and set aside in a large mixing bowl.

Step 2

In a separate bowl, whisk together the yogurt, grated onion, lemon juice, olive oil, minced garlic, ground turmeric, ground saffron (dissolved in 2 tablespoons of hot water), salt, and black pepper to create the marinade.

Step 3

Pour the marinade over the chicken pieces and mix well to ensure all pieces are evenly coated. Cover the bowl and refrigerate for at least 4 hours or overnight for the best flavor.

Step 4

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning.

Step 5

Preheat your grill to medium-high heat or set your oven's broiler on high. Lightly oil the grill grates or a baking sheet if using the oven.

Step 6

Thread the marinated chicken pieces onto skewers, alternating with chunks of bell peppers and onions if desired.

Step 7

Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is fully cooked and nicely charred in spots. If broiling, place the skewers on a baking sheet and broil for 15-20 minutes, turning halfway through.

Step 8

Remove the kabobs from the heat and let them rest for 5 minutes. Serve immediately with basmati rice, saffron-infused rice, or flatbread and a side of cucumber yogurt dip.
