Ingredients

  • 1 head Green cabbage
  • 500 grams Ground beef or lamb
  • 100 grams Basmati rice
  • 1 large Onion
  • 2 pieces Garlic cloves
  • 25 grams Fresh parsley
  • 10 grams Fresh mint
  • 1 teaspoon Turmeric
  • 0.5 teaspoon Ground cinnamon
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Tomato paste
  • 3 tablespoons Pomegranate molasses
  • 2 tablespoons Olive oil
  • 500 milliliters Water

Directions

Step 1

Core the cabbage and carefully separate the leaves. Blanch the leaves in boiling water for 2-3 minutes until softened. Drain and set aside to cool.

Finely chop the onion, garlic, parsley, and mint.

Step 3

In a large mixing bowl, combine the ground meat, rice, onion, garlic, parsley, mint, turmeric, cinnamon, salt, and black pepper. Mix well to form the stuffing.

Lay a cabbage leaf flat and trim the thick stem if necessary. Place a small amount of stuffing (approximately 2-3 tablespoons) at the base of the leaf. Roll tightly, tucking in the sides as you go to form a sealed roll.

Repeat this process until all the stuffing is used, setting the rolls aside on a plate.

In a large pot, heat the olive oil over medium heat. Add the tomato paste and pomegranate molasses, stirring well to combine.

Once the cabbage rolls are tender and infused with the sauce, remove them from the pot and serve warm.
