Ingredients

  • 16 pieces frozen potato and cheese perogies
  • 2 tablespoons coconut oil
  • 1 medium ripe mango, diced
  • 1 cup pineapple, finely diced
  • 0.5 medium red bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 medium lime, juiced
  • 1 small jalapeño pepper, minced
  • 0.25 teaspoon ground allspice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup sour cream

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat.

Step 2

Add the frozen perogies and cook for 3-5 minutes, or until they float to the surface. Drain and set aside.

Step 3

Heat coconut oil in a large skillet over medium heat.

Step 4

Add the cooked perogies to the skillet in a single layer and pan-fry them for 2-3 minutes per side, or until golden and crispy. Do this in batches if needed and set aside on a plate.

Step 5

In a medium-sized mixing bowl, combine the diced mango, diced pineapple, diced red bell pepper, red onion, and minced jalapeño pepper.

Step 6

Stir in the lime juice, chopped cilantro, ground allspice, salt, and black pepper. Mix well to prepare the mango-pineapple salsa.

Step 7

Arrange the crispy perogies on a serving platter and top with generous spoonfuls of the mango-pineapple salsa.

Step 8

Serve warm with a dollop of sour cream on the side for dipping and garnish with additional cilantro if desired.
