Ingredients

  • 18 pieces Large black olives (pitted)
  • 18 pieces Small black olives (pitted)
  • 4 ounces Cream cheese
  • 2 medium-sized Carrots
  • 18 pieces Toothpicks

Directions

Step 1

1. Cut the carrots into 1/4-inch-thick rounds. Reserve 18 of the largest rounds to serve as penguin feet, and cut a small triangular wedge from each round. Save the wedges to use as beaks.

Step 2

2. Slice lengthwise down one side of each large black olive. Carefully stuff each olive with a small amount of cream cheese, using a small spoon or piping bag for precision. Smooth the cream cheese to form a neat, solid white 'belly.'

Step 3

3. Assemble the penguin body: Place the cream cheese-stuffed large olive (belly side forward) onto a carrot round so it looks like the penguin's body is standing on the feet.

Step 4

4. Attach the head: Insert the carrot wedge (from the earlier step) into the hole of a small black olive to create a beak. Place this small olive on top of the large olive to form the penguin's head and secure with a toothpick running vertically through the head, body, and down into the carrot base.

Step 5

5. Repeat the process for the remaining ingredients to make 18 penguins.

Step 6

6. Arrange the Perky Olive Penguins on a serving platter and refrigerate for at least 15 minutes before serving to allow them to set.

Step 7

7. Serve cold and watch your guests smile at these adorable edible creations!
