Directions

Step 1

If using fresh or frozen corn, steam or boil the kernels briefly, then let them cool. If using canned sweetcorn, drain and rinse thoroughly.

Using a mortar and pestle or a food processor, grind the shallots, garlic, and red chili (if using) into a smooth paste.
