Ingredients

  • 4 large Russet potatoes
  • 500 ml Vegetable oil
  • 1 teaspoon Salt
  • 2 teaspoons Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil

Directions

Step 1

Peel the russet potatoes and cut them into even-sized, thick strips to make your chips.

Step 2

Soak the potato strips in cold water for at least 30 minutes. This will help to remove excess starch and result in crispier chips.

Step 3

Drain the potatoes and pat them dry thoroughly using a clean kitchen towel.

Step 4

Heat the vegetable oil in a deep pot or fryer over medium-high heat until it reaches about 180°C (350°F).

Step 5

Fry the chips in batches, ensuring not to overcrowd the pot, for about 5-6 minutes or until they begin to turn golden. Remove with a slotted spoon and drain on paper towels.

Step 6

Increase the oil temperature to about 190°C (375°F). Fry the chips again for another 1-2 minutes or until they are crisp and golden brown. Drain once more on paper towels.

Step 7

In a small bowl, mix together the salt, paprika, cayenne pepper, garlic powder, and dried oregano.

Place the hot chips in a large bowl. Drizzle with olive oil and lemon juice, then sprinkle with the spice mix. Toss well to ensure the chips are evenly coated.
