Ingredients

  • 500 grams Fresh squid
  • 1 piece Lemon
  • 2 cloves Garlic
  • 10 grams Fresh parsley
  • 1 piece Bay leaf
  • 1 teaspoon Salt
  • 1 teaspoon Peppercorns
  • 1 liter Water
  • 2 tablespoons Extra virgin olive oil

Directions

Step 1

Clean the squid by removing the head, innards, and transparent cartilage. Rinse well under cold running water. Slice the body into 1 cm wide rings, and the tentacles into bite-sized pieces.

Step 2

Peel and crush the garlic cloves with the side of a knife.

Step 3

Fill a large pot with 1 liter of water, and add the bay leaf, garlic, salt, and peppercorns. Bring it to a boil over medium-high heat.

Once the water is boiling, add the squid pieces. Cook for 2-3 minutes, or until the squid turns opaque and firm. Do not overcook, as this will make the squid rubbery.
