  • 6 cups yellow squash
  • 1 medium, diced onion
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter
  • 2 large egg
  • 1 cup sour cream
  • 1 cup, shredded sharp cheddar cheese
  • 2 cups, crushed Ritz crackers
  • 1 cup, grated parmesan cheese
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish lightly with cooking spray or olive oil.

Step 2

In a large pot, bring salted water to a boil. Add the sliced yellow squash and diced onion, and cook for about 5 minutes, or until the squash is slightly tender. Drain the vegetables well and set aside.

Step 3
