Ingredients

  • 1 lb ground lamb
  • 2 tbsp olive oil
  • 1 yellow onion, finely chopped
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 cup beef or lamb stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup milk
  • 0.5 cup cheddar cheese, shredded

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the ground lamb and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat if needed.

Step 3

Add the onion, carrots, and garlic to the skillet. Sauté for 5-7 minutes until the vegetables are softened.

Step 4

Mix in the frozen peas, tomato paste, beef or lamb stock, Worcestershire sauce, thyme, salt, and pepper. Simmer the mixture for 10 minutes, stirring occasionally, until the filling thickens slightly. Remove from heat and set aside.

Meanwhile, place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.

Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Stir in the shredded cheddar cheese and season with salt and pepper to taste.
