Ingredients

  • 14 pounds Whole turkey
  • 1 cup Unsalted butter
  • 2 tablespoons Fresh rosemary
  • 2 tablespoons Fresh thyme
  • 2 tablespoons Fresh sage
  • 4 Garlic cloves, minced
  • 2 tablespoons Salt
  • 1 tablespoon Black pepper
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, quartered
  • 2 cups Chicken broth

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the turkey giblets and neck from the cavity. Pat the turkey dry with paper towels.

Step 3

In a small bowl, combine the butter, rosemary, thyme, sage, minced garlic, salt, and black pepper. Mix until it forms a herb butter paste.

Step 4

Gently loosen the skin over the turkey breast by sliding your hand under it without tearing the skin. Spread half of the herb butter mixture evenly under the skin.

Step 5

Spread the remaining herb butter mixture over the outside of the turkey, ensuring even coverage.

Step 6

Stuff the cavity of the turkey with the chopped carrots, celery, and onion.

Place the turkey breast-side up on a rack in a large roasting pan. Pour the chicken broth into the bottom of the pan to keep the turkey moist.

Cover the turkey loosely with aluminum foil and roast in the preheated oven for approximately 3 1/2 hours, or until the internal temperature in the thickest part of the thigh reaches 165°F (74°C).

Step 9

Remove the foil during the last hour of roasting to allow the skin to turn golden brown.

Once cooked, remove the turkey from the oven and let it rest for 30 minutes before carving. This will help retain the juices.
