  • 5 pounds prime rib roast (bone-in)
  • 2 tablespoons kosher salt
  • 2 teaspoons black pepper (freshly ground)
  • 4 cloves garlic cloves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (room temperature)

Directions

Step 1

Take the prime rib roast out of the refrigerator at least 2 hours before cooking to allow it to reach room temperature.

Step 2

Preheat your oven to 500°F (260°C).

Step 3

Pat the prime rib roast dry with paper towels, then generously season all sides with kosher salt and freshly ground black pepper.

In a small bowl, mix together the olive oil and butter. Mince the garlic cloves and stir them into the mixture.

Rub the butter-garlic-olive oil mixture all over the meat, making sure it's evenly coated.
