  • 4 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Granulated sugar
  • 2 teaspoons Salt
  • 1.5 cups Warm water (110°F/45°C)
  • 2 tablespoons Unsalted butter, melted
  • 0.25 cup Baking soda
  • 6 cups Water for boiling
  • 1 tablespoon (or to taste) Coarse salt
  • 1 Egg yolk
  • 1 tablespoon Water (for egg wash)

Directions

Step 1

In a large mixing bowl, dissolve the yeast and sugar in the warm water. Let it sit for 5 minutes until foamy.

Step 2

Add the flour, salt, and melted butter to the yeast mixture. Mix with a wooden spoon or in a stand mixer fitted with a dough hook until a soft dough forms.

Knead the dough on a lightly floured surface for about 8 minutes, or until smooth and elastic. Alternatively, knead with a stand mixer for 5 minutes.
