Ingredients

  • 1 cup Leftover cooked oatmeal
  • 1 cup All-purpose flour
  • 0.5 cup Rolled oats
  • 0.5 cup Brown sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 0.5 cup Milk
  • 0.25 cup Vegetable oil (or melted butter)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped nuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a muffin tin with 12 paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, combine the leftover cooked oatmeal, egg, milk, vegetable oil, and vanilla extract. Stir until well blended.

Step 3

In a separate bowl, whisk together the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, salt, and ground cinnamon.

Step 4

Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; a few lumps are fine.

Step 5

If using optional add-ins like chopped nuts or chocolate chips, fold them into the batter at this stage.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week.
