Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 2 large Eggs
  • 1 cup Honey
  • 0.5 cup Vegetable oil
  • 0.5 cup Freshly squeezed orange juice
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Orange zest (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch round or square cake pan with butter and lightly flour it, or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground ginger, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.

Step 5

Mix in the honey, vegetable oil, orange juice, vanilla extract, and orange zest (if using) until well combined. The mixture may look slightly curdled, but this is normal.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 45–50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Allow the cake to cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely.

Step 10

Serve as is, dusted with powdered sugar, or with a drizzle of extra honey. Enjoy!
