Ingredients

  • 4 cups Green cabbage
  • 2 cups Red cabbage
  • 1 large Carrot
  • 1 medium Red bell pepper
  • 3 stalks Green onions
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Core the green and red cabbages, then use a sharp knife or mandoline slicer to thinly shred them into a large mixing bowl.

Step 2

Peel the carrot and grate it using a box grater or food processor. Add the grated carrot to the bowl with the cabbages.

Step 3

Dice the red bell pepper into small, bite-sized pieces and thinly slice the green onions. Add both to the vegetable mixture.

Step 4

In a smaller bowl, prepare the dressing by whisking together mayonnaise, sour cream, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth and well combined.

Step 5

Pour the dressing over the shredded vegetable mixture and toss thoroughly to coat all the ingredients evenly.

Step 6

Cover the coleslaw and refrigerate for at least 30 minutes to let the flavors meld together.

Step 7

Before serving, give the coleslaw a quick toss and adjust the seasoning with additional salt or pepper if needed. Serve chilled as a side dish or topping for sandwiches and barbecue plates.
