Directions

Step 1

In a medium saucepan, heat the whole milk over medium heat until it begins to steam and small bubbles form around the edges, but do not let it come to a boil. Stir occasionally to prevent scorching.

While the milk is heating, whisk the granulated sugar and egg yolks together in a medium mixing bowl until the mixture is pale and slightly thickened.

Once the milk is hot, slowly pour about 1/2 cup of the hot milk into the sugar and egg yolk mixture while whisking constantly. This step tempers the eggs and prevents them from curdling.

Gradually add the tempered egg mixture back into the saucepan with the remaining hot milk, whisking constantly to combine.
