Ingredients

  • 6 cups Fresh blackberries
  • 0.75 cup Granulated sugar
  • 2 tablespoons Brown sugar
  • 0.25 cup Cornstarch
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 2 pieces Pre-made pie crusts (or homemade pie dough)
  • 1 tablespoon Unsalted butter
  • 1 large Egg
  • 1 tablespoon Milk
  • 1 tablespoon Coarse sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large mixing bowl, combine the fresh blackberries, granulated sugar, brown sugar, cornstarch, lemon juice, ground cinnamon, and salt. Gently toss until the blackberries are evenly coated. Set aside to allow the juices to release while you prepare the crust.

Step 3

Roll out one pie crust to fit a 9-inch pie dish. Gently place it into the dish, pressing it against the bottom and sides. Trim any excess dough hanging over the edges.

Step 4

Pour the blackberry filling into the prepared pie crust. Spread it out evenly and dot the top with small pieces of butter.

Step 5

Roll out the second pie crust and place it over the filling. You can leave it whole or cut it into strips to create a lattice pattern. If leaving it whole, use a knife to cut a few slits in the top to allow steam to escape. If making a lattice, weave the strips into a pattern over the filling.

Step 6

Seal the edges of the top and bottom crusts together by pinching or crimping them. Trim any excess dough, if necessary.

Step 7

In a small bowl, whisk together the egg and milk to create an egg wash. Brush the entire surface of the pie with the egg wash, then sprinkle coarse sugar on top, if desired.

Step 8

Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 20 minutes.

Step 9

Reduce the oven temperature to 375°F (190°C) and continue baking for another 25 minutes, or until the crust is golden brown and the filling is bubbling.

Step 10

Remove the pie from the oven and let it cool on a wire rack for at least 2–3 hours to allow the filling to set before slicing and serving.

Step 11

Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
