Ingredients

  • 1.5 lbs Baby potatoes
  • 3 tbsp Olive oil
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 0.5 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh parsley (optional for garnish)
  • 1 sheet Aluminum foil

Directions

Step 1

Preheat your grill to medium-high heat (around 400°F) or prepare your charcoal grill for indirect cooking.

Step 2

Wash and scrub the baby potatoes thoroughly, leaving the skins on for texture and flavor. Pat them dry with a clean towel.

Step 3

Place the potatoes in a large mixing bowl. Drizzle the olive oil over the potatoes and toss them to coat evenly.

Step 4

In a small bowl, combine the paprika, garlic powder, onion powder, dried oregano, salt, and ground black pepper.

Step 5

Sprinkle the spice mixture over the potatoes and toss again until each potato is evenly coated with the seasoning.

Step 6

Cut a large sheet of aluminum foil (approximately 18 inches long) and lay it flat on a work surface. Place the seasoned potatoes in the center of the foil.

Step 7

Fold the sides of the foil towards the center, creating a sealed packet. Ensure the packet is tightly sealed to retain the steam while grilling.

Step 8

Place the foil packet directly on the grill grates. Close the grill lid and cook for 20-25 minutes, turning the packet halfway through to ensure even cooking.

Step 9

Carefully open the foil packet (watch out for hot steam!) and check the potatoes for doneness by piercing them with a fork. They should be tender and easily pierced. If needed, reseal the packet and cook for an additional 5 minutes.

Step 10

Once cooked, remove the potatoes from the grill and transfer them to a serving dish.

Step 11

Sprinkle freshly chopped parsley over the top for a bright and fresh garnish (optional).

Step 12

Serve your Perfect BBQ Potatoes hot as a side dish with your favorite grilled meats or vegetables.
