Ingredients

  • 4 pieces Perch or snapper fillets
  • 3 tablespoons Olive oil
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 2 cups Cherry tomatoes
  • 0.25 cup White wine (optional)
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Butter
  • 4 pieces Lemon wedges

Directions

Step 1

Pat the perch or snapper fillets dry with a paper towel and season both sides with salt and black pepper. Set aside.

Step 2

Thinly slice the onion and mince the garlic. Halve the cherry tomatoes.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion and sauté for 5-7 minutes until softened and slightly caramelized.
