Ingredients

  • 3 lbs beef chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 4 medium carrots, peeled and cut into 2-inch pieces
  • 4 medium potatoes, quartered
  • 3 stalks celery stalks, cut into 2-inch pieces
  • 12 fl oz Pepsi
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp dried thyme

Directions

Step 1

Season the beef chuck roast with salt and black pepper on all sides.

Step 2

In a large skillet, heat the vegetable oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Transfer the roast to a slow cooker.

Step 3

In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. Transfer the mixture to the slow cooker.

Step 4

Arrange the carrots, potatoes, and celery around the roast in the slow cooker.

Step 5

In a mixing bowl, whisk together the Pepsi, beef broth, tomato paste, bay leaf, and dried thyme. Pour the mixture over the roast and vegetables.
