Ingredients

  • 3 lbs Chuck roast
  • 1 tbsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 2 tbsp Olive oil
  • 6 slices Smoked bacon
  • 1 Yellow onion, chopped
  • 4 Carrots, cut into large chunks
  • 3 Russet potatoes, cut into large chunks
  • 1.5 cups Beef broth
  • 1.5 cups Pepsi
  • 2 tbsp Tomato paste
  • 1 tsp Italian seasoning
  • 3 Fresh thyme sprigs
  • 1 Bay leaf

Directions

Step 1

Season the chuck roast with salt, black pepper, and garlic powder on all sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the chuck roast for 3-4 minutes on each side until browned. Remove the roast and set aside.

Step 3

In the same skillet, cook the bacon slices until crispy. Remove the bacon, crumble it, and set it aside. Reserve 1 tablespoon of bacon grease in the skillet.
