Ingredients

  • 12 pieces Large button mushrooms
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 0.5 cup Breadcrumbs
  • 4 ounces Cream cheese, softened
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 teaspoon Dried Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.33 cup Mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

Clean the mushrooms by gently wiping them with a damp cloth. Remove and finely chop the stems, setting them aside.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems and minced garlic. Sauté until the mushroom stems are softened, about 3-4 minutes. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the sautéed mushroom stems and garlic with breadcrumbs, cream cheese, Parmesan cheese, parsley, Italian seasoning, salt, and black pepper. Mix until well combined and creamy.

Step 5

Brush the mushroom caps with the remaining 1 tablespoon of olive oil, and arrange them hollow-side up on the prepared baking sheet.

Step 6

Spoon the stuffing mixture into each mushroom cap, pressing it gently to fill the cavity.

Step 7

Sprinkle a small amount of shredded mozzarella cheese on top of each stuffed mushroom.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the cheese is golden and bubbly.

Step 9

Remove from the oven and let cool for a few minutes before transferring to a serving platter. Garnish with a sprinkle of fresh parsley if desired. Serve warm and enjoy!
