Ingredients

  • 3 cups All-purpose flour
  • 1 cup Mashed potato (plain, unsalted)
  • 1 cup Grated carrot
  • 1 cup Milk
  • 4 tablespoons Unsalted butter (melted)
  • 2 tablespoons Granulated sugar
  • 1.5 teaspoons Salt
  • 1 teaspoon Coarsely ground black pepper
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Warm water (110°F/45°C)
  • 1 large Egg
  • 1 tablespoon Olive oil (for greasing the bowl and pan)

Directions

Step 1

In a small bowl, combine the warm water and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes, until foamy.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, salt, and black pepper.

Step 3

In a separate bowl, mix the mashed potato, grated carrot, milk, melted butter, and egg until well combined.

Step 4

Once the yeast mixture is foamy, add it to the wet ingredients and stir to combine.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time.

Step 6

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic.

Step 7

Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning it to coat the surface with oil. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm spot for about 1-1.5 hours, or until doubled in size.

Step 8

Punch down the risen dough and shape it into a loaf. Place the dough into a greased 9x5-inch loaf pan.

Step 9

Cover the pan loosely with a towel and let the dough rise again for about 30-40 minutes, or until the dough rises just above the top of the pan.

Step 10

Preheat your oven to 375°F (190°C).

Step 11

Bake the bread in the preheated oven for 35-40 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.

Step 12

Remove the bread from the pan and let it cool on a wire rack for at least 20 minutes before slicing and serving.
