Ingredients

  • 4 large bell peppers (mixed colors)
  • 4 tablespoons extra virgin olive oil
  • 3 cloves garlic cloves, thinly sliced
  • 1.5 cups cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 0.5 cup fresh basil leaves, torn
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 1 tablespoon balsamic vinegar

Directions

Step 1

Wash the bell peppers thoroughly. Slice them in half lengthwise, remove the seeds and stems, and then cut them into 1/2-inch wide strips.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for about 1 minute, stirring often to avoid burning.

Step 3

Add the bell pepper strips to the skillet and stir to coat them in the garlic-infused oil. Cook for 10 minutes, stirring occasionally, until the peppers start to soften.

Step 4

Stir in the halved cherry tomatoes, dried oregano, salt, black pepper, and red pepper flakes (if using). Continue cooking for another 10 minutes, stirring occasionally, until the tomatoes have softened and released their juices, creating a light sauce.

Step 5

Remove the skillet from heat and stir in the torn basil leaves and balsamic vinegar. Adjust the seasoning if necessary.

Step 6

Serve warm or at room temperature as a side dish, or spoon over slices of crusty Italian bread for a light appetizer. Enjoy!
