Ingredients

  • 1 cup Water
  • 0.25 cup Milk
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 3.25 cups Bread flour
  • 2.25 teaspoons Rapid-rise (instant) yeast
  • 0.5 cup Pepperoni, diced
  • 0.33 cup Baking soda
  • 4 cups Water (for baking soda bath)
  • 1 tablespoon Coarse salt
  • 1 large Egg, beaten

Directions

Step 1

Add the water, milk, unsalted butter, granulated sugar, and salt to the bread machine pan in the order recommended by the manufacturer.

Step 2

Add the bread flour and make a small well in the top of the flour. Place the rapid-rise yeast in the well, being careful not to let it touch the liquid.

Step 3

Set the bread machine to the dough cycle and press start. Allow the dough cycle to finish, which will include mixing, kneading, and the first rise.

Step 4

Once the dough cycle is complete, turn the dough out onto a lightly floured surface. Gently knead in the diced pepperoni until evenly distributed throughout the dough.

Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.

Divide the dough into 8 equal pieces. Roll each piece into a rope about 20 inches long and form into a traditional pretzel shape or any other desired shape.
