Ingredients

  • 2 slices Sliced sourdough bread
  • 1 tablespoon Unsalted butter
  • 10 pieces Pepperoni slices
  • 2 slices Mozzarella cheese
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Dijon mustard
  • 6 pieces Fresh spinach leaves
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat a skillet or non-stick pan over medium heat.

Spread the butter evenly on one side of each sourdough bread slice.

Step 3

In a small bowl, mix the mayonnaise and Dijon mustard. Set aside.

Lay the pepperoni slices in the heated skillet. Cook for 1-2 minutes on each side, until slightly crisp. Remove and set aside on a plate lined with a paper towel.

In the same skillet, drizzle the olive oil and lightly sauté the spinach leaves for 30 seconds, just until wilted. Remove and set aside.
