  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups mozzarella cheese, shredded
  • 0.5 cups grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rigatoni pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, drain the rest, and set the pasta aside.

In a large skillet or saucepan, heat the olive oil over medium heat.

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.
