  • 6 ounces can of tomato paste
  • 2 cups chicken or beef broth
  • 15 ounces can of kidney beans, drained and rinsed
  • 15 ounces can of black beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup shredded mozzarella cheese, for serving
  • 0.5 cup grated Parmesan cheese, for serving
  • 0.25 cup fresh basil leaves, chopped (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and green bell pepper. Sauté for 4–5 minutes until softened.
