Ingredients

  • 12 oz rotini pasta
  • 2 cups broccoli florets
  • 1 cup pepperoni slices
  • 8 oz mozzarella pearls
  • 1 red bell pepper
  • 1 cup black olives
  • 0.5 red onion
  • 0.75 cup Italian dressing
  • 0.25 cup parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Cook the rotini pasta according to the package instructions. Drain, rinse with cold water, and set aside to cool completely.

Step 2

While the pasta cooks, blanch the broccoli florets by boiling them in water for 2-3 minutes. Immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.

Step 3

Dice the red bell pepper into small pieces and thinly slice the red onion.

Step 4

In a large mixing bowl, combine the cooked and cooled pasta, broccoli florets, pepperoni slices, mozzarella pearls, diced red bell pepper, black olives, and sliced red onion.

Step 5

Pour the Italian dressing over the pasta mixture and toss until everything is evenly coated.

Step 6

Sprinkle the parmesan cheese over the salad and season with salt and black pepper to taste. Toss again gently to combine.

Step 7

Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 8

Serve cold and enjoy!
