Ingredients

  • 6 cups Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.75 cup Black olives
  • 0.5 cup Shredded mozzarella cheese
  • 30 pieces Pepperoni slices
  • 0.25 cup Extra-virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the Romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the salad bowl.

Peel the cucumber, if desired, and slice it into thin rounds. Add to the salad bowl.

Thinly slice the red onion and add it to the salad bowl.
