Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 units peppermint tea bags
  • 2 tablespoons olive oil
  • 1 unit lemon
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh mint leaves
  • 2 tablespoons toasted almonds (optional)

Directions

Step 1

Bring 1.25 cups of water to a boil in a medium saucepan.

Step 2

Once boiling, remove the saucepan from heat and add the 2 peppermint tea bags. Cover and let steep for 5 minutes.

Step 3

Remove the tea bags from the water, gently squeezing out any excess liquid, and return the pan to medium heat until the tea-infused water just begins to simmer.

Step 4

Stir in 0.5 teaspoon of salt and 1 cup of couscous. Remove the pan from heat and cover it with a lid. Let the couscous steam for 5 minutes.

Fluff the couscous with a fork to break up any clumps and transfer to a large bowl.
