Bring 1.25 cups of water to a boil in a medium saucepan.
Once boiling, remove the saucepan from heat and add the 2 peppermint tea bags. Cover and let steep for 5 minutes.
Remove the tea bags from the water, gently squeezing out any excess liquid, and return the pan to medium heat until the tea-infused water just begins to simmer.
Stir in 0.5 teaspoon of salt and 1 cup of couscous. Remove the pan from heat and cover it with a lid. Let the couscous steam for 5 minutes.
Fluff the couscous with a fork to break up any clumps and transfer to a large bowl.
Drizzle 2 tablespoons of olive oil over the couscous and stir to coat evenly.
Zest and juice 1 lemon, then add both the zest and juice to the bowl of couscous. Stir to combine.

Season the couscous with 0.25 teaspoon of pepper, adjusting to taste.
