Ingredients

  • 2 pieces Puff pastry sheets
  • 200 grams Granulated sugar
  • 100 grams Crushed peppermint candies
  • 30 grams Unsalted butter, melted

Directions

Step 1

Thaw the puff pastry sheets according to the package instructions until they are pliable but still cold to the touch.

Step 2

Preheat the oven to 200°C (400°F) and line two baking sheets with parchment paper.

Step 3

In a bowl, mix the granulated sugar and crushed peppermint candies together until evenly combined.

Step 4

Lightly dust your work surface with a portion of the sugar and peppermint mixture. Place one puff pastry sheet on the prepared surface.

Step 5

Brush the top of the puff pastry sheet with melted butter. Then, evenly sprinkle about half of the remaining sugar and peppermint mixture over the surface of the pastry.

Step 6

Fold the two longer edges of the puff pastry sheet inward so they meet in the middle. Then, fold both sides again toward the center, creating a log-like shape with four layers. Finally, fold one half over the other to form a compact log.

Step 7

Gently press the folded log to seal it and refrigerate it for 10 minutes to firm up the dough for easier slicing.

Step 8

Repeat steps 4–7 with the second puff pastry sheet.

Step 9

Remove the first log from the refrigerator and slice it crosswise into 1 cm (about 1/2 inch) thick slices. Arrange the slices cut-side up on the prepared baking sheets, leaving about 2 cm (1 inch) of space between them.

Bake in the preheated oven for 12–15 minutes, or until the cookies are puffed and golden brown. Rotate the baking sheets halfway through cooking for even baking.

Step 11

Remove the palmiers from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
