Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.
In a clean, dry mixing bowl, add the egg whites. Using a hand or stand mixer fitted with a whisk attachment, whisk the egg whites on medium speed until frothy.
Gradually increase the speed to medium-high and slowly add the granulated sugar, one tablespoon at a time. Continue to beat until stiff glossy peaks form and the sugar is fully dissolved. This should take about 8-10 minutes.
