Ingredients

  • 1 cup unsalted butter, softened
  • 0.5 cup powdered sugar
  • 0.5 teaspoon peppermint extract
  • 1.25 cups all-purpose flour
  • 0.5 cup cornstarch
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon milk
  • 0.25 teaspoon peppermint extract (for glaze)
  • 3 tablespoons crushed peppermint candies or candy canes

Directions

Step 1

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Step 2

In a large mixing bowl, beat the softened butter and powdered sugar together with a hand or stand mixer until light and fluffy, about 2 minutes.

Step 3

Add the peppermint extract and mix until combined.

Step 4

In a separate bowl, whisk together the all-purpose flour and cornstarch.

Step 5

Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.

Step 6

Using a small cookie scoop or teaspoon, measure and roll the dough into 1-inch balls. Place the balls about 2 inches apart on the prepared baking sheets.

Step 7

Bake in the preheated oven for 9-11 minutes, or until the edges are set but the cookies remain pale. Be careful not to overbake.

Step 8

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

To make the glaze, whisk together the powdered sugar, melted butter, milk, and peppermint extract in a small bowl until smooth.

Step 10

Once the cookies are completely cool, spoon or drizzle the glaze over the tops of each cookie.

Step 11

Sprinkle the crushed peppermint candies or candy canes over the glazed cookies immediately so they set into the glaze.

Step 12

Let the glaze set for about 15 minutes before serving. Store cookies in an airtight container at room temperature for up to 5 days.
