Ingredients

  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Peppermint extract
  • 2.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup White chocolate chips
  • 0.75 cup Crushed peppermint candies or candy canes

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and peppermint extract until combined.

Step 4

In a separate bowl, whisk together the flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough just comes together—be careful not to overmix.

Step 6

Fold in the white chocolate chips and crushed peppermint candies using a spatula.

Step 7

Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets.

Step 8

Bake for 9-11 minutes, or until the edges are lightly golden. The centers will look slightly underbaked but will set as the cookies cool.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Step 10

Store in an airtight container at room temperature for up to one week, or freeze for longer storage.
