Ingredients

  • 115 grams Unsalted butter
  • 170 grams Semi-sweet chocolate chips
  • 200 grams Granulated sugar
  • 100 grams Brown sugar
  • 3 large Eggs
  • 1 teaspoon Peppermint extract
  • 95 grams All-purpose flour
  • 30 grams Unsweetened cocoa powder
  • 0.5 teaspoon Salt
  • 60 grams Mini chocolate chips
  • 30 grams Crushed candy canes

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a microwave-safe bowl, melt the unsalted butter and semi-sweet chocolate chips together in 30-second increments, stirring after each interval until smooth and fully combined. Let it cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, brown sugar, and the cooled chocolate-butter mixture until well combined.

Step 4

Add the eggs, one at a time, whisking well after each addition. Stir in the peppermint extract.

Step 5

Sift the all-purpose flour, unsweetened cocoa powder, and salt into the wet mixture. Fold gently with a spatula until just combined. Do not overmix.

Step 6

Fold in the mini chocolate chips for an extra burst of chocolate in every bite.

Step 7

Pour the batter into the prepared baking pan and spread it out evenly using a spatula.

Step 8

Sprinkle the crushed candy canes evenly over the top of the batter for a festive touch.

Step 9

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs (do not overbake).

Step 10

Allow the brownies to cool completely in the pan before lifting them out using the parchment paper overhang. Slice into 12 squares and serve. Enjoy!
