  • 2 T-Bone steaks
  • 2 tablespoons Coarsely ground black pepper
  • 1 tablespoon Kosher salt
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 Garlic cloves
  • 4 Fresh thyme sprigs

Directions

Step 1

Remove the T-Bone steaks from the refrigerator and let them come to room temperature for 30 minutes. Pat them dry with paper towels.

Step 2

Season both sides of the steaks generously with kosher salt and coarsely ground black pepper. Press the seasoning gently into the meat to adhere.

Heat a large cast-iron skillet over high heat until very hot. Add the olive oil and swirl to coat the pan.
