In a medium-sized bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add half the soy sauce (30 ml) and sliced beef to the bowl. Toss to coat and set aside to marinate for 15 minutes.
Cook the Shanghai noodles according to the package instructions. Drain, rinse in cold water, and set aside.
In a small bowl, combine the remaining soy sauce (30 ml), oyster sauce, dark soy sauce, 60 ml of water, and freshly cracked black pepper. Stir well and set the sauce mixture aside.
