Ingredients

  • 1 whole Red bell pepper
  • 1 whole Yellow bell pepper
  • 1 whole Green bell pepper
  • 1 cup Purple cabbage
  • 1 large Carrot
  • 0.5 whole Red onion
  • 2 tablespoons Fresh parsley
  • 3 tablespoons White vinegar
  • 2 tablespoons Olive oil
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash all the vegetables thoroughly under running water and pat them dry with a clean kitchen towel.

Step 2

Thinly slice the red, yellow, and green bell peppers into long, skinny strips. Place them in a large mixing bowl.

Step 3

Shred the purple cabbage into fine strips to make about 1 cup and add it to the bowl.

Step 4

Peel and grate the carrot using a box grater or food processor. Add it to the vegetable mixture.

Finely slice half of a red onion into thin strips and add it to the slaw mix.
