Ingredients

  • 4 pieces Salmon fillet (skin-on, about 6 oz each)

  • 1 cup Pinto beans (cooked or canned, rinsed and drained)
  • 1 cup Corn kernels (fresh, frozen, or canned and drained)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cup Red onion (finely diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh cilantro (chopped, optional garnish)
  • 1 piece Lime (juiced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.25 cup Water or vegetable broth

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the salmon fillets dry with paper towels. Season both sides with salt and coat the flesh side generously with coarse black pepper. Press the pepper lightly into the salmon to create a crust.
