Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 2 teaspoons Freshly ground black pepper
  • 1 cup All-purpose flour
  • 3 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Dry white wine
  • 3 tablespoons Lemon juice
  • 2 tablespoons Capers, rinsed and drained
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and use a meat mallet to pound them to about 1/4-inch thickness. Season both sides with 1/2 teaspoon of salt and 1 teaspoon of freshly ground black pepper.

Step 2

Dredge the chicken breasts in the flour, shaking off the excess.

Step 3

In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat until hot. Add the chicken to the skillet and cook for 3-4 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside on a plate.

In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.

Deglaze the skillet by pouring in the chicken broth and white wine. Use a wooden spoon to scrape up any brown bits on the bottom of the pan. Simmer the liquid for 3-4 minutes to reduce slightly.
